Slow Cooker Bean 'n' Beef Pepper Chili

The other day, Matt had a seriously inspired idea to make chili. I was all like, heck yeah, and he was like, let's do this! We really love our chili.

The beauty of a good batch of chili is that it gets better as it sits, hellllooooo leftovers! This was a new recipe that Matt stumbled across and decided to amp up with some fabulously spicy peppers. I hope you this veggie-licious recipe! Oh, and I'm not sharing any of my other eats from last Wednesday because a.) I forgot to take pictures all day and b.) 2/3 of my meals were this chili anyway :)

Whole30 Treats (and not the paleo kind)

As discussed in my recent post, I successfully completed the Whole30 program in January. At the outset, I promised myself a substantially fabulous reward if I managed to pull off a whole month of eating at least 95% paleo. Well I did (see some of my scrumptious paleo eats below) and today I'm sharing how I celebrated this personal victory!

I strongly believe happiness is all about your attitude, and it's so much easier to have a great attitude if you simplify your outlook on what's most important. For example, I've recently come to terms with the fact that I don't need a gym membership to be pleased with a workout and that sleep is the best essential! There's so much more I'm capable of with at least 7 hours under my belt (not the typical 4-5 hrs I've been getting lately).

Let's Get Paleo: My First Whole30 Experience

If you follow me on the ol' social media, you probably saw some of my photos in January whilst I was living the Whole30 dream. Well, those 30 days are well over now, and I must say it was a highly interesting experiment (if you're not familiar with Whole30, here's the quick run down).

Overall, I'd say I adhered to the Whole30 "rules" about 97% of the time during those 30 days. Even though I was making every conscious effort to eat/drink within the guidelines, when we ate out it was almost impossible to know that everything I was ordering was totally paleo-approved. Here is a list of foods I ate most frequently:

By far, the hardest part of this challenge for me was not consuming any alcohol. Because Matt's career is in the craft beer industry, sampling & sharing brews is a fairly significant aspect of our social life... and that's not even taking into account my weaknesses for good wine & bourbon on the rocks (sorry not sorry)...
