my morning has gotten off to a sweet & poetic start and i've been loving it so much that i wanted to share. here's a favorite poem by e.e. cummings which popped into my brain as i was sipping my morning coffee (chocolate glazed doughnut flavored deliciousness brought to you by Dunkin Donuts Bakery edition!)...

since feeling is first
who pays any attention
to the syntax of things
will never wholly kiss you;

wholly to be a fool
while Spring is in the world

my blood approves,
and kisses are better fate

This Morning's Mantra

Hi darlings,

Today I started my morning with a run and a grateful mantra: Appreciate this moment.

It helped me see the trees along my familiar running path in a better light, it helped me thoroughly appreciate how cute that puppy was on one of his very first morning walks, it helped me thoughtfully analyze the negative thoughts that ran across my brain on the drive to work. It helped me a lot today, and I think that makes it worth sharing.

All I Can Say is... Donuts

Hi darlings, it's been awhile.

I'm elated to report that my hiatus from writing has run its course. I can point to a lot of reasons why I gave it a rest. I was tired, over-stressed, going through a career change, burnt out on running and so on and so forth. The reasons I stopped for awhile aren't really that important right now. I'd rather focus on the simple facts at hand:

I'm happy, rejuvenated and really can't wait to make this delicious recipe again...

My version of Taylor's copycat Paleo Donuts. Because:

Slow Cooker Bean 'n' Beef Pepper Chili

Hi darlins'!

The other day, Matt had a seriously inspired idea to make chili. I was all like, heck yeah, and he was like, let's do this! We really love our chili.

The beauty of a good batch of chili is that it gets better as it sits, hellllooooo leftovers! This was a new recipe that Matt stumbled across and decided to amp up with some fabulously spicy peppers. I hope you this veggie-licious recipe! Oh, and I'm not sharing any of my other eats from last Wednesday because a.) I forgot to take pictures all day and b.) 2/3 of my meals were this chili anyway :)

Whole30 Treats (and not the paleo kind)

As discussed in my recent post, I successfully completed the Whole30 program in January. At the outset, I promised myself a substantially fabulous reward if I managed to pull off a whole month of eating at least 95% paleo. Well I did (see some of my scrumptious paleo eats below) and today I'm sharing how I celebrated this personal victory!

Happy Tip: Identify What You Don't Need

I strongly believe happiness is all about your attitude, and it's so much easier to have a great attitude if you simplify your outlook on what's most important. For example, I've recently come to terms with the fact that I don't need a gym membership to be pleased with a workout and that sleep is the best essential! There's so much more I'm capable of with at least 7 hours under my belt (not the typical 4-5 hrs I've been getting lately).

Let's Get Paleo: My First Whole30 Experience

If you follow me on the ol' social media, you probably saw some of my photos in January whilst I was living the Whole30 dream. Well, those 30 days are well over now, and I must say it was a highly interesting experiment (if you're not familiar with Whole30, here's the quick run down).

Overall, I'd say I adhered to the Whole30 "rules" about 97% of the time during those 30 days. Even though I was making every conscious effort to eat/drink within the guidelines, when we ate out it was almost impossible to know that everything I was ordering was totally paleo-approved. Here is a list of foods I ate most frequently:

By far, the hardest part of this challenge for me was not consuming any alcohol. Because Matt's career is in the craft beer industry, sampling & sharing brews is a fairly significant aspect of our social life... and that's not even taking into account my weaknesses for good wine & bourbon on the rocks (sorry not sorry)...

So Many New Things

Hi darlins'! It's great to see ya here!

Heavens it's been awhile since I've been around, hasn't it?? Though my guest post last week can technically count as being here, right? I vote yes :)

New Twitter & Instagram handle!
In my efforts to freshen up Southern Thintellect's look, I'm introducing a new twitter & instagram name: @SouthernThin

It's my last week of the Whole30 Challenge!
A lot has been going on since I was last regularly posting. If you follow me on social media you've probably been seeing my pictures from my 1st attempt to complete the Whole30 challenge. I'm currently 26 days in, and it's been a fabulous journey thus far. Stay tuned for a recap of my Whole30 experience come February.

New Kicks!
Proudly featured in Southern Thintellect's new header are my latest pair of running shoes, the Mizuno Wave Elixir 8 in Blue/Orange and let's just say... so far they're pretty freaking great. I'd like to give them a little more time & mileage before I post a full review, but stayed tuned for that too.
