Peanut Butter + Chocolate Chip Criss Cross Cookies

As I happily discovered just in the nick of time, yesterday was Bake Cookies Day! I was planning on baking up some goodies anyway for some of my friends & loved ones, so I didn't really need an excuse :)

Instead of blowing a bunch of dough (no pun intended) on toys and whatnot for the kiddles in your life, wouldn't it be so much nicer to give them baked cookies that you can enjoy too?? I thought so. That's why I took the time yesterday evening to whip up a special cookie treat for some really adorable young'uns...

Peanut Butter & Chocolate Chip Criss Cross Cookies
recipe modified from Betty Crocker

1/2 c. granulated sugar
1/2 c. packed light brown sugar
1/2 c. shortening
1/2 c. peanut butter
1 egg
1 1/4 c. all-purpose flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
3/4 c. mini chocolate chips

Pre-heat oven to 375F. Mix sugars, shortening, peanut butter and egg. Stir in flour, baking soda, baking powder and salt. Stir in chocolate chips. Shape dough into 1" balls. Place 2 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork. Bake about 10 minutes.
This classic cookie recipe was so simple & fun to make. Even better yet, these cookies turned out deeeelicious and if I wasn't giving them away soon, they'd be in serious danger of disappearing :)
