keepin' it light

Hi darlins'! It's great to see ya here!

Happy What-I-Ate-Wednesday y'all. The eats I'm sharing today are all fairly light 'n healthy (and typical for a weekday).  Just a random day of eats :)
Breakfast: Yoplait Vanilla Greek Yogurt topped with a package of the Maple & Brown Sugar Oatmeal Nut Blend Emerald Breakfast on the go! This was my first time trying this granola-ish deliciousness and it's wonderful! Side Note: This granola was free via Kroger's Free Friday Download -- making it even more wonderful :)

A.M. Snack: a crisp & juicy honeycrisp apple

Lunch: a 2-egg simple scramble with chicken and diced tomatoes from the garden

P.M. Snack: a handful of roasted & salted pistachios

Dinner: my staple breakfast burrito complete with red bell peppers, diced onion, chicken, mexican shredded cheese and Cholula hot sauce

Dessert: a chilled glass of white wine :)

Like I said, a pretty random day. However, if you'd like to find some excellent recipes, check out Jenn's and others' posts at Peas & Crayons!

Thanks for reading!!

  2. Pistachios have been one of my favorite snacks lately - especially the salted and shelled variety! And your breakfast burrito looks delicious!

  3. I have been eating pistachios like crazy lately! My favorite is putting them in plain Greek yogurt with honey. It's a winning combo!
