Happy Halloween y'all!! So not only is it one of my favorite holidays, but it's also October's Foodie Pen Pal reveal day, double win! Tonight I won't be wearing a costume, but last weekend I whipped up a Toad outfit and we threw a mighty fun Halloween fiesta at our place. Yes, some of my friends were nerdy enough awesome enough to dress up as MarioKart characters with us!
Let me preface my Foodie Pen Pal reveal by saying that my pal this month, Sonya at Baltimore Baker, is a total boss in the kitchen! You need to check out her blog A.S.A.P. because the recipes she posts are simply fabulous.

Gahh!! I'm so excited, only 11 MORE DAYS until the Nashville Hard Rock Cafe Marathon! Last week, my mileage peaked, I did my longest run to date and now I feel like I have what it takes to knock out 26.2 :)

Happy What-I-Ate-Wednesday!! Unfortunately, I'm having a bit of writer's block, so I'll just cut right to the chase and start sharing my eats from yesterday...

Breakfast [not pictured]: a simple scramble complete with 1/4 an avocado and diced-up chicken

Lunch: a sandwich on multi-grain bread with jerk turkey breast, chipotle gouda cheese, tomatoes from Matt's mama's garden and an amazing red pepper creamy sunflower spread that my new foodie friend Sonya at Baltimore Baker sent me!

Eggs are my favorite (aside from piiizzaaaa) -- I love 'em any way I can get 'em for breakfast, lunch or dinner. My work days start at the crack of dawn so the microwave is usually my best option for a quick 'n eggie breakfast treat. Roughly 97.5% of my weekday breakfasts are scrambles made at work, so I asked myself, why not share the microwave recipe love?

Spicy Beef Spaghetti Squash & Avocado

I made the yummiest dinner the other night, and while I forgot to snap shots of all of my other eats from Monday I still wanted to share this recipe :)
 Spicy Beef Spaghetti Squash & Avocado

You'll need:
1 medium-sized spaghetti squash
1/2 c. arrabiata sauce
1 Tbsp. garlic sriracha sauce
1 ground beef patty
1/2 an avocado

After firing up your grill, poke your spaghetti squash 10-12 times with a fork. Then, cook the poked squash in the microwave for 10 minutes, flip, and cook for another 10 minutes.

**CAREFUL when turning and taking the spaghetti squash out of the microwave** It will be very hot to the touch!

Let your squash sit, uncut, while you cook the ground beef patty on the grill. Once the burger is cooked, it's time to cut open your spaghetti squash. Cut down the middle, long-ways, then scoop out and discard the seeds.

Once all the seeds have been removed, scrape the innards out of the squash with a fork and into a deep dinner plate. Now, mix up the arrabiata sauce with the sriracha and spread it on top of the squash. Top with your burger, avocado and enjoy!

Spreading the Snail Mail Love

So, a few weeks ago I decided to participate in this nifty new pen-pal-esque program started by Sarah at Creating a Great Today called Monthly Mailers. The idea is that you're assigned a random person and you send via mail a positive and uplifting note or card, something small and inexpensive to touch that person's day. I think I was supposed to post about the little note I received yesterday (oops), but better late than never, right? :)

I was lucky enough to be assigned to Sarah's mother, Denise from Indiana (go Hoosiers!), and her little inspirational 'Make a Difference' card couldn't have landed in my mail box on a better day-- I had just gotten home from a long day at the office and it had been a crummy, that-time-of-the-month type of Monday.

After reading through her note, it's like a switch flipped and I immediately went from feeling sorry for myself/down-in-the-doldrums to perky as a peach! I had intended to skip my run that evening but instead went out and ran 4 miles along a new route in 38:50 and felt fabulous! All in all, this small piece of encouragement really turned my day around. I'd encourage anyone to try it!

Baked Punkin' Donuts!

I've done it, another box off my Fall 2013 Foodie Bucket List has been checked -- I give you... Baked Pumpkin Donuts:
(based off this recipe from King Arthur Flour)

1/2 cup vegetable oil
3 large eggs
1 1/2 cups granulated sugar
1 1/2 cups canned pumpkin purée
3/4 teaspoon ground cinnamon plus heaping 1/4 teaspoon each ground nutmeg and ground cloves
1 1/2 teaspoons salt
1 1/2 teaspoons baking powder
1 3/4 cups + 2 tablespoons all-purpose flour

  1. Preheat the oven to 350°F. Lightly grease your pans, in my case I used a donut pan and a mini-muffin pan.
  2. Mix together the oil, eggs, sugar, pumpkin, spices, salt, and baking powder until smooth.
  3. Add the flour, stirring just until smooth.
  4. Fill the donut/mini muffin pans about 3/4 full, you'll probably have to make more than one batch.
  5. Bake the donuts/mini-muffins for 15 to 18 minutes.
  6. Remove the donuts/mini-muffins from the oven, and after about 5 minutes, loosen their edges, and transfer them to a rack.
  7. While the donuts are still warm (but no longer fragile), gently shake them in a bag with the cinnamon-sugar. If you've made muffins, sprinkle their tops heavily with cinnamon-sugar.
  8. Cool completely, and wrap airtight; store at room temperature for several days.
We made these little delights last Saturday evening and enjoyed them the following morning with a some coffee. Since the recipe made so many little bites, we gifted some to a few wonderful friends...

Breakfast: Coffee & Parfait from Sky Blue Cafe
Lunch: Spicy Italian Sausage pizza with a side of football :)
Snack: Hand-picked Michigan apple from my September Foodie Pen Pal, Stacey
Dinner: a breakfast burrito with Cholula -- filled with eggs, bell pepper, onion and chicken

Octo-Training Update

Happy October y'all! Another month, another training schedule. It's hard to believe there are only 39 days until my 1st Marathon! October is a big month for me, I'll be peaking in my weekly mileage and running another half marathon in less than a couple weeks. It can all get a little overwhelming when I start to think about it, but I'm just taking it one run at a time and trusting the process:

As for my September training, I didn't quite meet my goal of skipping no more than 2 runs (skipped 3), but I'm happy with the progress I made last month all the same :)
