Foodie Pen Pals September Reveal

Today's the day I'm sharing all the goodies that my September Foodie Pen Pal, Stacey, sent me. She's from Michigan so her package really resonated with a feeling of home...
Along with Stacey's handwritten note, she sent a bundle of goodies:

1. Homemade Peach Blueberry Jam  (made with local peaches and blueberries from North Michigan that she picked with her kids!)

2. Apples from a local cider mill (again, picked with her kids!)

3. Cashews & Peanuts (I'm totally craving salty nut snacks right now)

4. Hand-Crocheted Yellow Dish Cloth (her mom made this, my mom used to make these all the time!)

5. Apple Crisp Mix (also from their local cider mill, cannot wait to use this)

6. Pure Maple Syrup (another local cider mill goodie, I bet it would taste great with #6 on my fall foodie bucket list)

1st Friday Fall Bucket List Update!

In my series of Fall 2013 Bucket Lists (see Part I, II & III), I identified a few 7-item categories of things I'd like to accomplish before Winter rears its icy head in Tennessee. To hold myself accountable, I'll be posting weekly updates on how this experiment going... here's to carpe-ing some autumn diem!

This treadmill was slightly easier on my legs than standard treadmills, but accident-prone runners should be cautious when using them. The traction on the rubber conveyor belt is insane, I tripped 3x during my run (thankfully no injuries), and that's not normal for me!

6. Finish the Music City Half Marathon (Oct. 13th)
7. Finish the Nashville Hard Rock Cafe Marathon (Nov. 9th)

Since I already had thrifted a gold-tinted branch wreath for this project, I kept the decorations simple & understated with a real mini-pumpkin wired on with an old hanger and bows I made from Halloween-themed ribbon from Goodwill.

2. A Homemade Halloween Costume... duh (it's one of my favorite things about fall)
3. Spruce up my "home-office" desk

So I didn't exactly "walk" around the campus, but running all over it yesterday evening was absolutely fabulous. I couldn't believe this place has always been so close to where I live and I've never ventured over. Definitely a new favorite running spot!

My small positive thought for the day...
It's finally fall! Who else is beyond excited to finally be able to sleep with the windows open?! We celebrated the changing seasons yesterday with ample amounts of home cookin' and football. I took a little break from running this weekend and instead got plenty of sleep and relaxation in,that is when I wasn't stuffing my face with snacking on these treats:

MMMmmm... Ham & Onion Potato Rounds with Cholula hot sauce and Jalepeno Poppers...

We also checked off the first item on my Fall 2013 DIY bucket list -- Make an Autumn Wreath. I love how simple and classic it came out!

This evening, after a long & busy Monday, I got a little random snail mail love from a stranger that definitely flipped the momentum on my attitude towards the positive and made my run 100x more marvelous!


I mean, how could anyone possibly walk away from that note without smiling their face off? Speaking of smiling your face off, I did just that when I was dreaming up all the marvelous things I want to do in Tennessee this autumn! Without further ado, here's the final installation of my three-part Fall 2013 Bucket List series:

Red Beans & Rice

Happy What-I-Ate-Wednesday! Don't you love that the weather is cooling off? It makes me want to just sit around and eat all of my most favorite comfort foods all day long (as can be evidenced by the almost empty box of pumpkin spice donuts on our counter at home).

One of my favorite, healthier comfort meals is something my Mom has been cooking for me forever, Red Beans & Rice. I gave it a whirl on my own last night, made some adjustments and it was really tasty!
Red Beans & Rice
2 cans low-sodium dark red kidney beans
2 medium onions, minced
4 garlic cloves, minced
1 jalapeño, minced
3 Tbsp olive oil
1 tsp cumin
1 tsp coriander
1 tsp paprika
salt 'n pepper to taste

Fry onions, garlic and jalapeño in olive oil until soft. Add kidney beans and seasonings, then cook until heated through (roughly 30 minutes). Serve over rice & enjoy! I paired mine with a crisp cider from Angry Orchard :)

Not going to lie, it was fabulous to devour such a filling dish after a day of eating lots of small, light meals. Here are my other eats from yesterday:

Re-Reading the HP series...
Because you can never read these books too many times! (Bonus: finding an old bookmark made me smile something fierce...) 

and running my longest distance ever!
15 miles nice & easy with walking as needed (followed by my first ever ice bath)

Do you have a consistent routine for weekend food prep? At the very least, I try to wash and cut all my veggies and fruits for snacks as soon as I get home from the grocery store.
What types of meals/snacks do you prepare ahead of time? I usually only prepare snacks ahead of time, but I've been thinking about expanding my food prep recently to include some full meals.

Fall 2013 Bucket List: Fitness & Foodie Edition

You guys, there's just 9 days until the First Day of Fall... I'm seriously getting excited (see my favorite things about the season here). In the spirit of Type A personalities, I'm making lists of things I'd like to make happen in the Autumn season this year. I'm gonna keep these short & sweet to 7 items (7 is my lucky number) so that it doesn't turn into feeling like a chore and stays the fun, indulgent exercise it's intended to be!

Today, I have my Fitness & Foodie edition to share, but first a couple things:

Date night was last night! I really love getting dolled up in the evening because, let's be honest, usually it's either workout clothes or just a strict no-pants zone at home.
The restaurant we picked is located on the other side of the city. I adore this particular drive, it's one of my favorite views of the skyline!
We were craving big, juicy burgers like crazy. I treated myself by ordering a decadent cheese burger w/ garlic aioli and side of sweet potato fries. The two craft brews didn't hurt either ;)
All delicious, and I totally have no regrets. It's important to me to just relax and enjoy an indulgent meal every now and then.

Now on to the fabulous lists!

Top 10 Things I Love About Fall

Can you believe there's only 10 more days until the first day of fall?? I certainly can't. Heck, it's still gets to be nearly 90 degrees outside on the daily, how can autumn be almost upon us? Oh wait. This is Tennessee. The weather doesn't care about silly things like what season it is!
Because I do care about the seasons, in this transitional time, I'd love to share my Top 10 Things I Love About Fall! Here goes...

#10. Grammy's Pumpkin Bread
She only makes it once a year... and that only makes it better! I could attempt to recreate it, but my version would never taste as good :)


#9. Boots
The poor boots in my closet get so little action south of the Mason-Dixon! I love any opportunity they can get to come out and play.


#8. Hard Apple Cider
Spiced rum + Hot apple cider = dynamite. Maybe add in a little caramel vodka too...


#7. No Shave November
Fact: I love beards. There's just something really attractive about a guy who knows how to rock facial hair. I wouldn't doubt that this is Matt's favorite time of the year :)


#6. Tailgating Done Right
In college, we weren't too serious about our football team, but man, we were serious about our tailgating.

#5. Finding the Perfect Pumpkin
It always takes me forever to find the right one, but it's always worth it!

#4. Hocus Pocus
Watching this movie is a unshakable tradition.


#3. Cozy Sweaters & Wearing Uggs
Because what screams fall more than comfort and completely unfashionable cozy apparrel?

Happy 100th!

It's hard to believe this is Southern Thintellect's 100th post! Thank you all so much for reading, you're the reason it's so fun to blog :)

Here's wishing you a Happy What-I-Ate-Wednesday! I don't have a new recipe for you today, just a Sunday full of random eats...

Post Long Run Breakfast: Tangerine Greek yogurt, a banana and a slice of multi-grain toast with smart balance light and strawberry Bama jam

NFL Sunday Snack (noshed on throughout the day): roasted & salted pistachios

Lunch & Dinner: Slices of the Maui Wowie pizza from Mellow Mushroom, it had a pesto base with ham, pineapple, jerk chicken, applewood-smoked bacon & mozzarella cheese.

Dessert: Homemade brownies. Because what weekend would be complete without a little baking? :)

Marvelous is (NOT) Allergies

I took a little break from technology (or at least my computer) over the weekend and devoted myself to completing a few around-the-house projects. Unfortunately, this time of year is INSANE for allergies and I spent most of the weekend sniffing, sneezing, dripping and coughing my little heart out.
The nutty thing is that I've never had seasonal allergies like this before in my entire life...I've been told it's called the "Tennessee Syndrome" (I mean, living in the south is pretty incredible, there have to be some drawbacks, right?)

On a more marvelous note, there were some pretty wonderful things about this weekend that are starting my week off on a (sniffly) high note...

We wired our home for audio.
Matt is a wizard at setting up home entertainment systems. On Saturday, it took us a few hours to run (totally hidden) speaker wire from our main entertainment system to the kitchen and upstairs bathroom. Now, we can listen to music all over the house! I'm even more excited for IU game watches :)

I made time for a DIY project.
As some of my friends & family members already know, I love whipping up these DIY coffee mugs as gifts. They're so simple to create!

DIY Coffee Mug Instructions
1. Wash your mug.

2. Draw on design with sharpie.

3. Put mug in oven and then turn on to 425 degrees F.
*Important* Don't pre-heat oven before putting in mug to avoid cracking.

4. Let sit in oven for 30 minutes, then turn off oven.
*Important* Don't remove mug until oven is completely cool to avoid cracking.

Once cool, if your mug's design survives a wipe test and dish washer test you're golden!

My LR was a success!
Early Sunday morning I ran 10 miles on a loop around Music Row. It was fun to get a time series of the sun rising over Demonbreun :)

I baked.
A couple months have passed since I last made made-from-scratch brownies (last time was for Matt's birthday), so I whipped up a batch to pair with Sunday Night Football.

this smoothie was sooo yummy

1 c. whole frozen strawberries
1 single serving pkg of pineapple greek yogurt
1 scoop vanilla protein powder
1/2 c. milk
add ice to desired thickness

Blend the above ingredients together & enjoy!
