#WIAW no. 9: Odds & Ends

We were gone over the weekend exploring southern TN, so today's What I Ate Wednesday eats are basically just what I was able to scrap together before I thankfully went grocery shopping last night. It was more fun than I thought it would be, getting creative and branching out -- I hope you enjoy!

My day had an especially fruity start. We bought some peaches in GA over the weekend, and I miraculously had leftover fruit from our getaway cocktail stash to add to the mix. Clearly, we didn't drink enough last Saturday ;)

I reached into the relative depths of the pantry for my AM snack: some trail mix I had bought for camping trips last fall. Hey, there was chocolate in it and the package wasn't expired so I was a happy woman!

For lunch, I happily regressed to the freezer, canned goods and cooking skills I acquired at age six. Ala, chicken noodle soup & chicken tenders. Yes, I know, it was quite wonderful...
After work, I headed straight to the gym & busted out some more Bad Ass Beautiful circuit workouts before trucking it to the grocery store to replenish our food stuffs. Unfortunately, I was too zonked after the gym to cook any of it. Instead, Matt & I sauntered over to our favorite neighborhood taco joint and I noshed on a black bean taco with sweet potato fries.

Of course I forgot to take a picture of dinner, but I didn't hesitate to snap a shot of this cool dude on the walk to the restaurant:

What's your favorite economically creative meal you've whipped up recently? A pile of leftover fruit.

Chicken Noodle or Tomato soup? On its own, I'd take tomato...

Oh hot damn, this is my jam...

Thought I'd catch up and share some fun photos from our getaway over the weekend:

We had some beautiful views...

And delicious brews...
...and then some more delicious eats & treats ensued! We made the pizza with basil flatbread, homemade pizza sauce with fresh oregano from our garden, sliced pepperoni and lots of  Mozzarella cheese :)

And then this happened...
Oh hot DAMN, Bama Jam is my JAM!! Seriously though, you can't get southern jam this good even in Nashville. We stocked up of course :)

#WIAW no. 8: Homecooking is the Best Cooking

I'm back for another edition of What I Ate Wednesday, and boy did I have some good homemade eats earlier this week!

For a sunny start to my morning, breakfast was a typical scramble with a Southwestern twist. Red and green bell peppers spiced up my usual egg-tastic routine. This one had 2 full eggs and about a 1/2 cup of red & green bell peppers diced.

Around 11am, I noshed on a juicy bowl of navel oranges and fresh pineapple chunks.

At lunchtime, I threw together some steamed broccoli and chicken. It always hits the spot!

I usually get pretty hungry a few hours after lunch, so I was happy to down a big bowl of sliced up cucumber and red bell pepper around 4pm.

Dinner was where the homecooking thrived. Matt and I put our heads together and used a ton of leftovers to whip up this filling pasta concoction and side of roasted garlic sweet potato fries!

Not pictured is the other delicious homemade treat we whipped up for dessert... Banana Bread w/ Chocolate Chips! One of my favorite family recipes, it just tastes like home :)

What time do you normally (if you do at all) eat breakfast? Around 8 a.m. on a typical weekday.

Marvelous in My Monday (MIMM): Rewarding Weekend Adventures

I'm linking up this morning for the first time with Katie over at Healthy Diva Life to share some of what's Marvelous in My Monday :)
Over the weekend, I was able to check quite a few more boxes off of my Bad Ass Beautiful challenge bingo card:

On Saturday morning, I woke up bright & early and biked downtown to volunteer for Nashville PRIDE 2013. It was buckets of fun! I made some new friends and got some stellar crafting advice from the nicest drag queen I've ever met (e.g., instead of hot glue, use E6000 on crafting projects, it'll hold rhinestones on anything!). Here's some pictures from the morning:

I also got to partake in a little retail therapy after my volunteer shift was over and stumbled across this fabulous Mexican basket handbag at one of the little fashion truck vendors, Trunk.
I feel so lucky to have been apart of such a love-filled and joyful celebration and incredibly rewarded by the entire experience. I can't wait until my next volunteering adventure in July (hint hint, it involves loving on some of those little furry friends I got to hang with on Saturday!)

This Father's day I didn't get to hang out with Daddy dearest (the lucky duck is in Italy with Mama right now!), but he was in my thoughts all day. I certainly wouldn't be the woman I am today without that marvelous man to look up to.
Getting zen, I spent over an hour alone with no technology yesterday afternoon and followed that up with a great Bad Ass Beautiful circuit workout to cross two more boxes off my challenge To Do list, and all that combined with a scrumptious Southwest Scramble for breakfast has got me feeling pretty Marvelous this Monday ;)

My breakfast scramble consisted of 2 full eggs and red & green diced up bell peppers.

Sunday Treats for the Soul

What a wonderful weekend we had in Nashville (and what a wonderful Game of Thrones finale too at that). No spoilers I promise, I just really enjoyed the episode :)

I kicked off today with a soggy 6+ mile run through some very green neighborhoods. It was an easy, relaxing workout and I was really happy with my pace and how I felt post-run.

After some well-deserved coffee & retail therapy, I mailed off a handwritten letter to my little sister (1st Bad Ass Beautiful box goal met today)...

...and packed a cardboard box full of closet clutter to donate (2nd Bad Ass Beautiful goal met today). Not gonna lie, those little treats for the soul are paying dividends tonight :)

With those two boxes checked, I feel very confident that I'll be able to meet the challenge of not eating any foods with >5 ingredients on the label from now through Wednesday. Today was filled with nutritious hummus, veggies, fruit and corn tortilla chips, very satisfying so far, here's to keeping up the good eats and feelin' Bad Ass Beautiful!

Bump in the Bad Ass Beautiful Road

I've got a Bad Ass Beautiful challenge update for y'all today. Over the last 3 days I attempted to abstain from foods with >5 ingredients on the label. Unfortunately, last night (on the home stretch) I think I mucked it up.

Yesterday evening I had to go out to a large group business dinner, you see, in my line of work so much gets done around the breakfast/lunch/dinner table. While I was being mindful of not eating anything I knew would break the rules (e.g., bread, beer) I still can't be sure that the mind-blowing, delicious meal I consumed didn't include any overly processed ingredients (see: housemade bacon, the fĂȘte de la mer plate, edamame, 6 oz of filet mignon, risotto tater tots, charred broccoli and brussel sprouts in some divine sauce).

That being said, I'm not giving myself full credit for this box of our challenge, but the month is young and I'm determined to check this goal off the list. Hindsight is 20/20, and next time, I'll start this challenge during a week where I can prepare all my meals myself for a few days and know exactly what I'm getting. To help salvage this bad news post, here's a picture of Shadow snoozing, isn't he adorable? :)

#WIAW no. 7: Day 1 of More Whole Foods

In the spirit of June's Bad Ass Beautiful #InsideandOut challenge, I'm going to share eats from the 1st day of my 3-day undertaking to abstain from foods with  more than 5 ingredients on the label for today's What I Ate Wednesday post...

For Breakfast I had a small plate of raspberries with my usual scramble, this one was just 2 full eggs & a dash of salt n' pepper...

Mid-morning, I enjoyed a sliced up red bell pepper and petite carrots. I love love love peppers raw :)

For lunch, I mixed up an entire bag of steamed broccoli with 1 full egg and 2 egg whites. Pretty tasty!

Then around 4pm or so, I chowed on some more veggies for an afternoon snack, this time a bowl of semi-peeled and sliced up english cucumber with carrots...

Due to the fact that we were traveling over the weekend, we didn't really have a lot of groceries left for me to get creative with dinner. I did however scrounge up a yummy bowl of plain greek yogurt, fresh pineapple, blueberries and honey to eat after my circuit workout.

Then a couple hours before bed (keeping to goal #2) I had a late night snack of peanut butter... straight from the jar :)

After keeping with this interesting and difficult challenge yesterday, I'm now starting my 3rd day of abstaining from foods with >5 ingredients on the label. Luckily, I made a quick trip to the grocery store yesterday so today should be much easier!

Focused Goals & Monday Meraki (#MM) no. 12

Hi darlins'! It's great to see ya here! I hope your weekends were marvelous :)

It felt so satisfying to complete the May Core Challenge last Friday, but now I'm even more pumped for the month to come -- The Bad Ass Beautiful challenge that I co-created with Sabrina over at Lit Laugh Love should prove to be an invigorating & fun way to kick off summer!

Speaking of our #InsideandOut challenge, I'm starting this week off by abstaining food with >5 ingredients on the label for the next 3 days (...this is going to be interesting). Day 1's breakfast was a plate of perfectly ripe raspberries and a 2-egg scramble with salt n' pepper.

While traveling to Indiana over the weekend, I was rethinking my short-term Goals of the Moment and I've decided to rededicate myself to more specific goals:

Goals of the Moment

1. Drink at least 80 oz. of water every day.

2. No eating or drinking 2 hours before going to sleep (except for non-caffeinated tea & water).

3. Do at least 40 minutes of pure cardio activity on at least 5 days out of every week in June and July.

4. Complete at least 90% of the Bad Ass Beautiful challenge in June.

...and I know it's been a little while... (see previous post on creative ways to embrace your inner morning person)...but let's Meraki!

Meraki (v): to do something with soul, creativity, or love; to put something of yourself into your work

Over the last week, Matt and I have been working on a little decorating project. Thanks to a reclaimed window we were given from his Grandmother's old home in Indiana and some pretty nifty custom printing work, our kitchen now sports our very own view of the Nashville skyline...
We couldn't be happier with the finished product and I love the energy this self-made artwork brings to our home!
