Until 2014...

Wow, this year just flew by, and so many amazing things have happened! This tiny note will be my last post of 2013. I'm taking time off from blogging to spend more time with my loved ones, travel, write and re-think aspects of Southern Thintellect's design & structure.

I'll still be messing around on twitterinstagram and of course pinterest, so hit me up in any of those wonderful places if you miss me!

Here's wishing you the happiest of holidays, and I'll see you next year!

As I happily discovered just in the nick of time, yesterday was Bake Cookies Day! I was planning on baking up some goodies anyway for some of my friends & loved ones, so I didn't really need an excuse :)

It's been awhile since I've joined in on What I Ate Wednesday, mainly because I've been traveling and eating a lot of leftovers and haven't been very good about documenting said eats... oops.

On top of that, the minimal amount of cooking I have been doing has been just been boring, simple comfort food so I wasn't too inspired to share.

HOWEVER, now that we're back to a somewhat normal routine of cooking on our own again, I have a scrumptious recipe from yesterday to share! I give you... my ultimate favorite banana bread recipe, courtesy of my big sister!

In my last post, I let y'all know about our little Denver ski trip plans for over the weekend, and I admitted to being a little nervous because I'm a total skiing novice. Well, in a nutshell, our day of skiing was fabulous! It may have got off on a rocky start, but after all the tumbling & then learning from those mistakes I now feel so much more confident in my abilities on the slopes.
There are definitely some things that would have been helpful to know beforehand, so I'd love to share those with y'all now:

When you're looking forward to a really cool weekend trip doesn't the beginning of the week always seem to go by sooooooo slowly?? Well, this week was certainly no exception, and I'm so excited to fly out to Colorado tomorrow! I'm traveling for work, but Matt and I will also be staying for a weekend funpalooza. Is that a word? It is now :)

For starters, we'll be rocking the ridiculously over-the-top amazingly cool furry hats we recently purchased at H&M. Obviously.

And after the business aspect of the trip is out of the way, oh how the fun shall begin!

I hope y'all had a marvelous weekend! I spent the time home with my family in Indiana, it was quite marvelous in several ways, but especially marvelous because there were so many fluffs!

My family's ultra-mom cat had her umpteenth litter a couple months ago and as a favor for a friend I held a flufftastic photo shoot so she could see which one she might like to take home. They're all precious but I think she's going with the gray tabby. Of course, I had to include my family's two doggies in the shoot, they love the kittens too!

I'm happily linking up with Becky at Olives 'n' Wine again today for a post-Cyber Monday edition of Treat Yourself Tuesday. I wholeheartedly agree that we should all find even the smallest of ways to treat ourselves everyday, because guess what, we deserve it!

So per the title of this post, I basically won at yesterday. After a wonderfully productive day at work, Matt and I treated ourselves to some scrumptious Thanksgiving leftovers (best perk of hosting) & an epic date night that I'm taking full credit for...

The Belcourt Theater is one of my favorite venues in Nashville. It's an old independent movie theater that has been renovated to the nines, they're always showing the most interesting films and BONUS you can drink amazing craft beer whilst enjoying said movies!

Actual Result: Ran/Walked 52.1 miles

Given that this mileage goal included running my first marathon I'd say it was pretty ambitious, but that's ok! The big goal kept me moving a lot more than I probably would have without it during the second half of November.

Greetings from a rainy & cozy Tennessee! This past week has been incredibly relaxing & restful. Exactly what the doctor ordered after running my first marathon. My body was a lot more tender than I'd anticipated and so my workouts over the last seven days have been kept to a bare minimum of walking, planking and minimal easy pace running. Unfortunately, I didn't meet my weekly Pile on the Miles goal of 13 miles, but I'm loving all the rest and my body is starting to feel back to normal again :)

However, I do have an embarrassing discovery to share...

A very happy What-I-Ate-Wednesday to ya! Given that my eats today were all from Halloween, it's kind of miraculous that all of the pictures below aren't of candy. In fact, I didn't have ONE piece of candy that day! Granted, this Reese's PB cup hound was feeling a tad under the weather, but still that's highly unusual.

Happy Halloween y'all!! So not only is it one of my favorite holidays, but it's also October's Foodie Pen Pal reveal day, double win! Tonight I won't be wearing a costume, but last weekend I whipped up a Toad outfit and we threw a mighty fun Halloween fiesta at our place. Yes, some of my friends were nerdy enough awesome enough to dress up as MarioKart characters with us!

Lunch: a sandwich on multi-grain bread with jerk turkey breast, chipotle gouda cheese, tomatoes from Matt's mama's garden and an amazing red pepper creamy sunflower spread that my new foodie friend Sonya at Baltimore Baker sent me!

Eggs are my favorite (aside from piiizzaaaa) -- I love 'em any way I can get 'em for breakfast, lunch or dinner. My work days start at the crack of dawn so the microwave is usually my best option for a quick 'n eggie breakfast treat. Roughly 97.5% of my weekday breakfasts are scrambles made at work, so I asked myself, why not share the microwave recipe love?

Spicy Beef Spaghetti Squash & Avocado

I made the yummiest dinner the other night, and while I forgot to snap shots of all of my other eats from Monday I still wanted to share this recipe :)
 
 Spicy Beef Spaghetti Squash & Avocado

You'll need:
1 medium-sized spaghetti squash
1/2 c. arrabiata sauce
1 Tbsp. garlic sriracha sauce
1 ground beef patty
1/2 an avocado

Directions:
After firing up your grill, poke your spaghetti squash 10-12 times with a fork. Then, cook the poked squash in the microwave for 10 minutes, flip, and cook for another 10 minutes.

**CAREFUL when turning and taking the spaghetti squash out of the microwave** It will be very hot to the touch!

Let your squash sit, uncut, while you cook the ground beef patty on the grill. Once the burger is cooked, it's time to cut open your spaghetti squash. Cut down the middle, long-ways, then scoop out and discard the seeds.
 

Once all the seeds have been removed, scrape the innards out of the squash with a fork and into a deep dinner plate. Now, mix up the arrabiata sauce with the sriracha and spread it on top of the squash. Top with your burger, avocado and enjoy!

Spreading the Snail Mail Love

So, a few weeks ago I decided to participate in this nifty new pen-pal-esque program started by Sarah at Creating a Great Today called Monthly Mailers. The idea is that you're assigned a random person and you send via mail a positive and uplifting note or card, something small and inexpensive to touch that person's day. I think I was supposed to post about the little note I received yesterday (oops), but better late than never, right? :)

I was lucky enough to be assigned to Sarah's mother, Denise from Indiana (go Hoosiers!), and her little inspirational 'Make a Difference' card couldn't have landed in my mail box on a better day-- I had just gotten home from a long day at the office and it had been a crummy, that-time-of-the-month type of Monday.

After reading through her note, it's like a switch flipped and I immediately went from feeling sorry for myself/down-in-the-doldrums to perky as a peach! I had intended to skip my run that evening but instead went out and ran 4 miles along a new route in 38:50 and felt fabulous! All in all, this small piece of encouragement really turned my day around. I'd encourage anyone to try it!
